New recipes tried this week

Variations: I made it pretty much as described, mashing rather than blending the cooked potato. I didn't put cheese on top.
Verdict: Very easy and straightforward, and pretty quick. Very sweet, though - definitely needed more chilli (I took some of the seeds out), and probably another savoury or sour flavour to balance the sweetness of the potato. One to experiment with rather than give up on.
Lamb Pilaf with Figs, Pomegranate and Feta, also from the Good Food Magazine website.
Variations: I didn't have a pomegranate or yoghurt, although yoghurt would definitely have worked well. I washed the rice well and soaked it for about 10 minutes before using it.
Verdict: Fairly easy, very tasty. Once you've assembled the ingredients it's pretty much done, and there are lots of interesting flavours. I'd probably increase the proportion of feta to lamb, next time, and add more parsley and pistachios. You could even leave the lamb out, if you wanted, as there's enough going on in this dish that it wouldn't be boring without. I'd also like to find some sourer dried cranberries - these were very sweet and didn't quite stand out enough.
